2016 Cabernet Franc

Cabernet Franc is such a fun variety to work with. Each year we experiment with different fruit sources to further explore the different nooks and crannies of the SYV with Cab Franc as the vector.  The final blend is comprised of mostly fruit in the center of the Santa Ynez Valley in what is now known as the Los Olivos District, with a small amount making its way in from Happy Canyon.  Roughly 20% stem inclusion was used during fermentation where infusion is the goal more so than extraction.  Tannin must be tamed in Cab Franc and our hope with gentle handling during fermentation and neutral oak aging is that the fruit will shine while being propped up by soft and supple tannins.
