2016 Sauvignon Blanc - Santa Ynez Valley

2016 was our 4th year to make Sauvignon Blanc and I couldn’t be happier.  Sauvignon blanc is planted in many vineyards all throughout Santa Barbara County.  When planted it cooler locations it tends to be more grassy, floral and austere.  Warmer sites bring out roundness and flavors associated with the tropics.  This bottling of 179 cases represents fruit harvested from four different vineyards.  Being from four different sites and fruit harvested on many different days we were able to incorporate all the good things that we think the Santa Ynez Valley offers Sauv blanc!

 

At harvest the fruit was brought to the winery as cold as possible foot-treaded to break open the berries and start the gentle extraction of the juice.  Once pressed the juice was allowed to sit overnight and then only the cleanest juice was transfered to our trusted fleet of old oak barrels and stainless steel drums.  Fermentation and aging was completed in about 70% oak and 30% stainless.  Jenn and I have been enjoying drinking this wine the last couple of weeks and it is our hope that it will continue to bring pleasure for the next 3-5 years.
