2017 Chenin Blanc - SBC

In regards to Chenin Blanc 2017 was a change of pace a bit.  Prior to harvest I arranged a lease of a vineyard with one acre of Chenin Blanc.  Even though the lease didn’t go into effect until Jan. 2018 we were able to purchase the 2017 crop.  In addition to this new site, Tres Hermanas Vineyard off Foxen Canyon Rd., we also purchased Chenin from two other sites in the area to do our best to showcase the regional character of the grape through our hands.  

Typical of all our white wine making, we pressed the juice to tank for 24 hours to settle out the heaviest of sediment before being racked to mostly neutral oak with a few stainless barrels for fermentation and aging.  The wine was gently racked twice prior blending to clarify the wine as best as possible. It was bottled after 7 months aging without any fining or filtration. Minimal amounts of sulfur were added after the completion of ML and prior to bottling.
