2018 Sauvignon Blanc - Santa Barbara County

Sauvignon blanc is always one of the first grapes we bring in each year and also one of the first that we bottle. 2018 was no different. This year’s grapes were sourced from two different vineyards both just east of Hwy 154 in Santa Ynez. The grapes from both sites were treated the same, that is, crushed then gently basket-pressed. Once pressed the juice was put into neutral French oak barrels for fermentation then aging. Minimal sulfur was used throughout the process and the wine was not fined nor filtered. Our goal with sauv blanc is always the same, harvest before the grapes taste tropical, ferment and age in oak for texture and bottle fresh.
